Carrot & Caraway Muffin
Developed from a recipe in Alissa Timoshkina’s cookbook 'Salt and Time', this muffin is a novel spin on the traditional carrot cake. Made with a 50/50 blend of rye and spelt flour, it is wheat-free. The dough is moist, fragrant and has a deeper flavour due to the addition of rye. To top it off, a touch of caraway adds a subtle warm spiciness.
Orange, sugar, carrots 13%, walnuts, egg, spelt flour (gluten), rye flour (gluten), rapeseed oil, baking soda, caraway seeds 0.3%, baking powder (leavening agent E450, E500), salt, spice mix (coriander, cinnamon, ginger, nutmeg, cloves).
